GF: The 6 Minute Lunch

Sorry I’ve been so quiet lately. I can attest that my brain has been quiet….that’s for sure! I’m busy getting back into the teaching groove. This week, that essentially breaks down into 5 nights of four hours of sleep and 4 days of lunch on the run.

For the last two days, I have been eating lunch in 6 minutes flat at my desk… and THAT was at a RELAXED pace!

You’re jealous.  LOL.  I just know it. 😛

So here’s my question…. what do YOU eat for your speed lunch? I have access to a microwave and a GF toaster.

What would you pack if you were me? I’ll share my lunch lists later.

I’ll be back this weekend with a recipe for Honey Oatmeal bread… that’s what I’ve been dreaming of all week.

  1. I mostly just eat leftovers – Stirfries, rice and beans, pasta, etc. Occasionally some Amy’s GF mac ‘n’ cheese. My own homebaked bread with hummus and tomato. Hummus with red pepper strips and carrots and/or Mary’s Gone Crackers. Grilled cheese made in the toaster. Quinoa pilaf with some feta added.

  2. 6 minutes?
    I’d eat a banana, some nuts, a piece of fruit and drink water.

  3. Lunches are hard for me if I don’t do leftovers. I would say sandwiches with homebaked bread, rice, salads, or maybe brown rice tortilla wraps. Good luck!

  4. Pizza quesidilla – corn tortillas, spaghetti sauce, pepperoni, cheese. Make them ahead of time and reheat in the microwave. Add a small salad if you can and yum.
