Gluten Free Everyday Eats: Day 18

Day 18 lunch

Today we were up and out of the house early!  (Well…early for summer when I am not teaching.)  I had a doctor appointment. We had to run to Costco and then another stop…and home.  Breakfast was on the run.  I had to get the kids up and out of the house much earlier than they had to be in the most recent days.  By the time I got them fed and their snack packed, we had to go!  So breakfast?  Yeah.  That was more like a large cup of coffee. :D

What do you do for breakfast to go when you are late?  

Do you have two different breakfast plans?  

I do!  One for quick-grab and go breakfasts and the others for more leisurely mornings.   During the school year, I have a list of things that I tend to grab for breakfast.  I honestly am not a breakfast kind of person at 5:00AM – so I tend to take something I can eat at my desk at 7:00AM when I get to work.  As for the weekends or later mornings?  This is the list of breakfast foods I like.

Today…I kind of blew it on all breakfast fronts.  :D

Breakfast:  Water and a cup of coffee on the go.  

Snack:  Gluten free beef jerky and a glass of water.  NOT PICTURED:  handfuls of raspberries and a couple of strawberries from my Costco run. :D

Gluten Free Everday Eats:  Day 18

Lunch:  Seriously, I am eating this tomorrow.  Don’t be annoyed with the repetitive meal plan but MAN this was tasty!  I had roasted chicken with a tiny dab (seriously – a little bit!) of cream cheese between two cucumber slices.  The huge red grapes hit the spot too.  Water to drink.

Dinner:  I had a huge salad, a 1/2 cup of steamed sticky rice and 1 grilled chicken thigh (not pictured).  Water to drink.

This was taken during my favorite part of the day.  Well…second favorite.  I loved watching my imps play with their doll house for over an hour together.

Gluten Free Everyday Eats – Day 11

Day 11 feature

Let’s see:  sick kids, new eyeglasses and a birthday (reluctant) boy to boot.

Normally, I would have taken a trip up to a local Korean bakery to pick up a cake for My Love.  He loves fresh cream and fruit cakes.  But with a sick kid?  No thanks.

Other option?  This Gluten Free Sponge Cake.  It’s his second favorite.  

But oh no.  I decided to make a blueberry pie.  I had to use up some of the blueberries in the fridge.  Our favorite variety (“Spartans”) will be at the Farmer’s Market on Saturday.  But as a budget watcher, I wasn’t about to go out and buy more if we still had a huge amount left behind.  So tonight I not only made a blueberry pie, but I also made a ginger-blueberry syrup for weekend pancakes.  (My weekend just may have to start tomorrow because that syrup is killer yummy!)

The pie?  Well..the improv pastry shell was decent.  But my filling needed a LOT more sugar.  I was trying to cut back and only  used about 1/2 cup of sugar in my 8 cups of berries.  It was definitely not enough.  And since we didn’t let it cool for several hours (only 1 or 1.5), it was a tad runny.  Ah well.  Live and learn, right?

The app I’ve started using along with this personal challenge of posting my daily food is called “MyFitnessPal”.  Today it says I’ve logged the most calories from any other in the last 11 days.  I’m not shocked.  The blueberry pie and blueberry syrup may have just been what pushed me over the edge.  LOL  Amazingly, because I walked an extra mile and ta-dah!  I was STILL coming in on count.  I still need to get more veggies in my day.  The teeny bit (corn and some lettuce at lunch) is not exactly filling nor filling me up with the nutritional things I will gain from it.  I will have to figure out a plan of attack to do that.  I used to be much better (sans kidlets) when I would bring home groceries and immediately prep by chopping etc for the week.  Not any more.    

I am also trying to figure this out to encourage my eldest to eat more vegetables.  She used to eat a ton of veggies but now would rather stick to udon noodles, chicken, tofu, cheeseburgers (cheese! cheese! cheese!), or fruit. Gone are the days that she used to eat zucchini, black beans, corn, etc.  I’m blaming myself but am hopeful that it’s a kid phase.  

Have any of you seen this program?  “Today I Ate A Rainbow”  I might try to figure out how to make a chart for ALL of us to use for a week/day following this idea.  Any thoughts?

Birthday Dessert:   A slice of blueberry pie and one scoop of ice cream.  (And there are three more birthday celebrations this month!  Be still my waistline!)

Gluten Free Everyday Eats – Day 9

Well… I’m posting this on the morning of Day 10.  I knew this would happen at some point.  The littlest peanut just about drove me up a wall yesterday and now I know why:  she’s sick.  Poor thing.  I read their new book to them (“Listen Buddy” – the story of why listening is important because…well…one of them could use the lesson.  LOL) and then I promptly fell asleep with the girls.  Lights out.  9:45PM.  Yes, I am a party animal. :D

Yesterday we stuffed ourselves silly.  I also ordered some of that granola that I mentioned on Day 8.  Apparently polishing off what I had on hand was not enough when you wake up and you are still thinking about it.  LOL

It was an average day.  Nothing to wax poetic about but we did end up eating out last night.  Our hair cuts took a little longer because I asked for the stylist to please try to cover my “Elvira gray patch/streaks” otherwise known as “kid-scars”.  :D  As a result, I spent more money than I had originally planned, but I’m also happier with my new haircut and coloring.  The girls both got their hair cut (5 inches off for Zoe and 3 inches off for Rory) as did My Love.  It was a family affair because that was the only time available.  Next time, we are not going as a group.  The kids have to wait far too long (thus my gray hair).

Anywho…here’s what was on the menu for yesterday:

Breakfast:  2 eggs scrambled with parmesan cheese and garlic, a handful of gluten free crackers, a large serving of cut cantaloupe and a banana.  And yes, coffee.

Lunch:  Leftovers from the Thai restaurant (no rice..the kids gobbled that up!), a white peach and water.

Dinner:  (Oh my… let’s see….)  An overly dressed Caesar Salad (sans croutons), gluten free “flatbread” (really just a gf pizza crust brushed with garlic oil) with marinara sauce (the kids at this mostly), and 3 slices of sausage and extra cheese pizza.  Water to drink.

And today?  Well…so far it’s Chex Cinnamon cereal (to die for…but it has a downside too for me…more on that tonight) and coffee.
