Today was busy but fun. Between morning errands and whatnot, I had a plan for lunch, etc. None of which worked out. Ha! Typical for my planning some days. When we got to where we were going to eat lunch/play date, the cafe had run out of all gluten free options (seriously… they had carrot sticks left). I was hungry! Ah well.
I had better get myself to the market tomorrow. I am craving a huge salad and we only had a head of broccoli in the house. I saved some to make some broccoli slaw for lunch tomorrow – *just in case* my brilliant plan for tomorrow also fails me.
Breakfast: I thought I’d try a boxed mix for gluten free scones before. While I scoffed at the ingredients list, the “Meyer Lemon Scones” had my taste buds,so I totally splurged. ($6.79/box!) I whipped up the scores this morning. They were decent (but not a lot of flavor to them….I would have been very hard pressed to call them “lemon scones”) when they were hot. However, once cool? I was bummed. (PS. My DH saw them on the counter when he got home for lunch and sent me a text. He wondered why I had made “vanilla cupcakes in blotches” Ha!)
Thank goodness for raspberry jam. Now if only I had some clotted cream. Breakfast (with the warm version of the scone) would have been decadent. The coffee was perfect.
Lunch was a total bust. My girls at the carrot sticks I was offered because they were hungry. I knew I could make some scrambled eggs when we got home. So that’s what my lunch (at 2PM) ended up being: scrambled eggs with parmesan and garlic, a yellow peach (it was sour!) and water.
Dinner: steamed brown rice, steamed broccoli and a little tilapia. (All made in the rice cooker again…. I think I’m liking this trick of cooking in the rice cooker!). Honestly, the fish I made the other day was better. This one didn’t marinate long enough to fully develop much flavor and I think I used a little too much lemon. DH ate several servings so it was at least decent enough for that. Quite likely, though, he was just hungry. LOL
Snack: Tonight I am munching on some tortilla chips (the ones I love to eat with my scrambled eggs) and some water.

Happy birthday to my littlest imp….Life has not been the same since 11:50PM on July 16, 2010 and I wouldn’t change a thing.
I saved up my calories today because we went out to eat for birthday dinner. So glad I did! Lunch (for me) consisted of cupcake tasting. Ha! Does that count?
Breakfast: Scrambled eggs with a bit of parmesan and garlic, handful of gluten free tortilla chips and 3/4 cup of grapes. Coffee. Definitely coffee.
(This is by far the most bizarre purple hued picture ever.)
Lunch: Honestly, I was too busy feeding little people and attempting to create a new cupcake recipe to eat. Don’t worry, I made up for it by eating a cupcake fresh out of the oven. All in the name of recipe creation.
Dinner: (At a chain restaurant with a gluten free menu and remarkably, a knowledgeable server. joy!) Appetizer: chips and “queso blanco” (Not really a word in Spanish – just a melted white cheese with peppers, etc). Dinner: Wedge salad with Green Goddess dressing and a 4 ounce blackened sirloin. (I didn’t eat the potatoes in the photo…they were…ummm… strange texture and I passed.) Water with dinner and an Irish Whiskey (sans the non-gluten free canned whipping cream).
Dessert: After some evening games and joy, we sat down to some birthday cupcakes. (Whipped cream “frosting”) They were yummy and spongy. I think we’ve found a new recipe. My husband says they taste like a “soft French chiffon” …. I just think it tasted lovely. I don’t worry about the comparison – but it is helpful to have someone who can give better descriptions that I around when I’m trying to write things up!

Busy day today… my favorite part was when my eldest checked in for physical therapy by announcing that “Padawan Zoe” was checking in to see “Master Yoda”. Boy, did that receptionist get a kick out her! Hope you had some good chuckles in your day today too!
We were on the last of the veggies. Apparently I was so fruit happy at the Farmer’s Market that I failed to buy my weekly veggies. Tomorrow we might need to head to the market for some salad greens, etc. But today? No way. Other items on the agenda list!
Birthday balloons ordered? Check!
Birthday cake planned? Check! (The birthday girl wants to help make it.)
Presents wrapped? Check!
Momma ready to crash? way more than check!
Breakfast: Greek yogurt with blueberries/raspberries and part of a quesadilla. Coffee and water to drink.
Lunch: Steamed sesame tilapia with carrots and brown rice. Water to drink. (PS. Made in the rice cooker!)
Dinner: Two egg, cheese-free “egg-a-dills”, red grapes and water to drink. A white peach as well.
Not pictured today? The lovely Rain City Crunch granola I am munching on while I type. My snack for the evening with some water.
