Gluten Free Everyday Eats – Day 21

Posted on by .

I’m hoping the end of the weekend also means the end of my technology nightmares.  Sadly, I think I also have forgotten to snap a photo of lunch today (breakfast was a mocha-soy latte, I don’t think that counts, right?)  I knew there would be challenges to my 31 days of food in photos…but gesh.

On Sunday, July 21, I made a huge brunch for the family.  I love Sunday mornings! What about you?  Is your breakfast different on the weekend than during the week?

GFEveryday

Breakfast: + Lunch:   Breakfast “pizza” (eggs, sausage), fruit (cantaloupe, raspberries, blueberries, grapes), avocado, etc.

Gluten Free Everyday Eats – Day 20

Day 20 breakfast

Today while playing outside with the girls, I thought I would kick back for a bit.  I brought my cell phone outside to check email etc while the girls played.  It’s cold here in the mornings – so they were wearing sweatshirts.  Not long after playing in the sun, however, they took off the sweaters.  It meant a pile of sweatshirts next to the coffee.  I put my cell phone on top of their sweatshirts…and not long after I heard the unmistakeable gurgle of something being dropped.  O.o

I couldn’t save it.  It was completely fried.

My stomach churned when I did a little reading online and saw that Verizon was going to charge us $550 for a replacement phone.  (TOTALLY NOT happening.)  So Plan B – bring it in to Apple Store (we had purchased extended warranty there) and get out the old cell phones to charge (just in case).  Seriously?  I’ve never been so happy to have purchased an extended warranty ($99/2 years) from a company in my life.  Phone was replaced for $50!  Thank goodness.

However, this means that I have pictures of breakfast yesterday (Saturday – Day 20) but no other meals.  :D

GFEveryday

Breakfast:  Homemade migas (eggs, tortillas, roasted veggies, onions/garlic), a few chicken sausages (I had “help” eating mine and ended up with just one), fruit, coffee and water.

Day 20 breakfast

Lunch:  A white peach and some water.  (Breakfast was huge!)

Dinner:  Bi-bim-bap and water.  YUM!  (Do you know what bi-bim-bap is?  It’s basically blanched/seasoned (salt and sesame oil) veggies with steamed rice and a fried egg on top.  Common veggies are:  mung beans, carrots, spinach and burdock.  I have not found any of the traditional red chile paste that is put on top that is gluten free.  I can’t wait until I do!  It adds so much to the flavor.  And while sriracha *is* gluten free, it is not the same flavor as the traditional Korean red paste that accompanies bibimbap.  My search continues.)  :D

I now have a functioning phone, but nothing is set up and ready to go.  Maybe that is the 2nd biggest pain?  The first was the freak out about having to figure out replacement plan if necessary.   The second?  Definitely resetting everything on it.  :S  Alas, I did not have my phone set to back up everything.  Oh well.  Live and learn, right?

Happy Weekend!

Gluten Free Everyday Eats – Day 19

Day 19 lunch

So these two posts (Day 19 and 20) are late.  Sorry about that.  I had a doozy of an ending to the week.  :D  Not only did this website get “attacked”  (really, people?  Nothing better to do??  B!) but on Saturday morning, I had the joy of fishing my cell phone out of a full cup of coffee.  Oh yes, technology + me has not been working.

On Friday – Day 19 – we took the kids to see Despicable Me 2.  Our littlest one was unimpressed but the biggest child is completely baffled by the fact that someone would give all the minions shots to make them “meanies”.  It has been rattling around in her head since the movie let out and she is filled with questions.  I think it’s the only movie she’s seen that she has announced that she doesn’t want to see again.  I wonder if her sense of reality and imagination are colliding?

Missing from my pictures from Friday is the box of junior mints and water that I had while watching the movie.  Something about snapping a photo with my cell phone in a dark theater did NOT seem like a plan – even BEFORE the movie started (as we shut our phones off during the film…unlike the man in front of me….grrrr).  I will leave the idea of a chocolate treat to your imaginations.  :D

GFEveryday

Breakfast:  water.  I woke up late and wasn’t hungry.

Lunch: Cucumber slices (for my sandwich) with a dab of cream cheese and roasted chicken.  I could not get this out of my head!  I had a friend over with her son for a playdate – she had a piece of my “sandwich” and was hooked too.  YUM!  NOT pictured:  a half of a peach and water.

Day 19 lunch

Dinner:  Teriyaki Chicken and veggies/rice.  Here’s my recipe for teriyaki sauce that is delicious and easy to make!  I make a batch of this and then put it in the fridge for 7-10 days to use.  When I’m really organized, I make a larger batch and “can” some of it for longer storage.

Day 19 dinner

Hope you are all having a great weekend!
