Gluten Free Everyday Eats – Day 29 & 30

What is happening to me?  I have developed the exhausted version of myself in the end of July?  Not good!  Time for some R & R – although I think that might just happen late next week as now we have some more OT/PT appointments this week for Zoe.  The good news is:  We are doing all that we can to make sure she is ready to go for Kindergarten this fall.  She’s so excited!

So excited, in fact, that she’s been announcing that as soon as Kindergarten is over, I should “get ready” because she will be “off for college then, Mom”.  Egad!  Please don’t let time fly that quickly by.

Day 29

Doctor appointments and craziness meant dinner out.  My dinner picture includes a shot of the girls Tofu Agadashi (my order came without the broth as they used soy instead of tamari – rats!).  It was still tasty.  And I packed some small portable gluten free soy sauce packets in my purse, I was totally ready!

Breakfast:  Turkey wrapped in a Rudi’s tortilla.  Coffee (aka “life blood”)

Lunch:  Recipe testing!  I made a fresh loaf of a recipe I am working on (Quinoa & Honey – gluten free, of course).  Made a sandwich….and forgot to take picture as we raced out the door to our PT appointment.

Dinner:  Sushi!  (I had tamage, spicy scallop handroll, California handroll and some agadashi todu (minus the agadashi…LOL)  This photo shows the agadashi tofu that the girls ate.  Yum!

Day 30

Breakfast:  Did I eat breakfast?  Ha!  That would explain why I devoured lunch!  No breakfast!

Lunch:  Shared an Udi’s Uncured Pepperoni Pizza.  Water.

Dinner:  Spaghetti (Jovial pasta, Marinara sauce, ground beef), grapes, muskmelon.  Water

Today is the last day of this adventure.  I’m learning a lot about my own eating patterns.  I can see where I could improve. Overall, doing this has made me seriously curious about what others are eating everyday.  Bloggers tend to post something that strikes us or hits our fancy.  I tend to post when I can – but usually after working on a recipe of sorts.

My current recipe endeavor – the perfect quinoa & honey loaf – is off to a great start.  Now  just need more testers!  I wish you all lived closer.  Save me some calories and give me some input!  :D

Gluten Free Everyday Eats – Days 25, 26, 27, 28!

Oh my!  I feel like the rug got yanked out from underneath my feet at the end of the week last week.  Life became very busy and I not only forgot to take pictures of the food/meals I ate, but I didn’t even get a chance to log on to the blog to upload anything or post.  Ah yes, such is life for all of us sometimes.  Between playdates, summer camp, doctor appointments, MAJOR spring clearing/cleaning (in July…LOL), and birthday parties, life just moves on.  It’s wonderful and fast, fast fast!  I have a huge list of to-do yet to be accomplished before school starts up again in the fall.  

So….. I might have to recreate my menus for you based on an app I’ve been using to track my calorie consumption (MyFitnessPal – do you use it?).  I have been LOVING the fact that it contains MANY MANY gluten free menu items and modified foods.  I can easily find my soy-no whip coffee or Rudi’s tortillas, etc.  It rocks!  (I have no affiliation with this app/site…..it was introduced to me by a girlfriend who uses it too.)

Thursday, Day 25

Breakfast:  Nothing (late for the day as usual!)

Lunch:  Chicken & Cheese rolls (lunch meat rolled around a slice of cheddar cheese), apple and Greek yogurt.

Dinner:  (Take out/Wendy’s) Baked potato with chives (no sour cream/no butter), water and a white peach.

Snack:  Late night (obviously, dinner was not enough!)  Maple Sugar & Chile Popcorn (yum!)

Friday, Day 26

Breakfast:  Scrambled eggs & Rudi tortilla, coffee

Lunch:  White peach, grapes, lettuce wrap sandwich (chicken, cucumber, ranch dressing), water

Dinner: Cabbage Slaw (found a Cat Cora recipe….wasn’t out thing, but worth trying!)

Snack:  Yellow peach and raspberries with Greek Yogurt

Saturday, Day 27

Breakfast:  Goat cheese with Sweet Thai Chili Sauce, apple slices and gluten free crackers

Lunch:  Chicken & shrimp teriyaki with rice & veggies

Snack:  None

Sunday, Day 28

Breakfast:  Nothing  – we were racing out the door for a birthday party!

Lunch:  California sushi hand roll x 2

Dinner:  Sausages & eggs, apple slicesday28dinner

Snack:  None

 

Well – now I hope I can manage to stay on track for the last couple days of this month!  I just pulled a fresh loaf of bread out of the oven (Honey & Quinoa Flake) that smells divine.  I might just have to cut a slice for my snack.  If it tastes as well as it smells, I will be in heaven!

Man!  I was busy today – just running around with the girls.  In fact, I was so wiped out, I fell asleep putting them to bed.  (Surely I am not the only mom who does this, right?)  :D

Here are my meals for the day:

Breakfast:  Rudi’s tortilla’s with egg, sea salt and cracked pepper (cooked egg on top of tortilla in a pan, top like a quesadilla, flip), some cherries and coffee

Breakfast - Day 2

 

 

Lunch:  A lunch pizza (Glutino crust (thawed), in a pan topped with fresh garlic oil, a couple slices of turkey, egg, and feta cheese = baked then topped with seaweed (sesame seaweed).  Served with cantaloupe.  (PS.  While my husband wrinkled his nose at the mere thought of seaweed on my pizza, he had no trouble eating 2 slices.  LOL)  Water to drink.

Dinner:  Rosemary-oil grilled chicken, honey & thyme quinoa, fresh spinach salad with homemade strawberry-balsamic dressing and watermelon.  Water to drink.

Tomorrow will be interesting to see what I end up eating.  My post will be late.  Not only do we have a morning playdate out of the house (with lunch, most likely, on the go as well) but we are going to a friend’s house for a 4th of July Fireworks buffet.  I’m sure I will eat more than my share, but yes, it will be challenging.  And yet, it is totally doable.  Just wait and see.
